The honey, the supply, and how we work together.

Eklekton produces two varieties: wildflower honey and pine honey. Wildflower honey has a light amber colour, mild floral aroma, and clean finish, harvested in spring from the Serres lowlands. Pine honey has a deep colour, rich texture, and distinct resinous character, gathered in late summer from highland forests above Serres.

Eklekton honey comes from Serres in Northern Greece. Wildflower honey is harvested each spring from the lowland meadows and herb fields of the Serres basin. Pine honey is gathered in late summer from the highland pine forests above Serres. All honey is packed at Eklekton's own facility in the village of Ivira, Serres (GR-62049).

Pine honey is darker, denser, and less sweet, with a distinctive resinous aroma and high mineral content. It crystallises slowly and holds its texture longer. Wildflower honey is lighter in colour and flavour, with delicate floral notes and a smooth finish. Both are harvested from distinct terrains around Serres at different times of year.

Eklekton honey is minimally processed to preserve its natural enzymes, pollen content, and flavour profile. It is extracted by centrifuge, lightly strained to remove wax particles, and packed without pasteurisation or blending. The facility in Ivira, Serres follows ISO 22000 food safety protocols throughout the handling and packaging process.

Wildflower honey is harvested in spring and pine honey in late summer, each at the peak of the respective season. Frames are extracted by centrifuge at the Eklekton facility in Ivira, Serres.
